The profile of this coffee is a synthesis of time-honored and modern approaches to sourcing and roasting which produces a decadent, heady espresso but also a rich, balanced filter or full-immersion brew for those looking for something on the darker side.

The perfect morning cup can differ from person to person but, in our estimation, one constant is that it should always be crisp and clean. The coffees in Wakerobin will change throughout the year but we will always choose coffees from Latin America that are medium-bodied, lightly sweet, and finish cleanly with every sip. Some months it may present more stone fruit and others it may have more berry qualities but it will always have a reliable base layer of chocolate and stewed fruits.

Process: EA Decaffeination
We choose clean coffees with lower acidity and high sweetness and roast them with an emphasis on attaining a rich mouthfeel and clean finish. Our decaf coffee is decaffeinated using ethyl acetate naturally derived from fermented sugarcane instead of synthetically. This method along with quality coffee produce a sweet cup with a clean finish that pairs well with any dessert and good conversation.
